• Fairytale (Musquée de Provence) — dense, very sweet, complex; stellar roasted and for pies.
• Jarrahdale — sweet, nutty, string-free, velvety purée; excellent for pies/roasting.
• Cushaw / Kershaw — classic Southern pie squash; sweet, fine-grained; great keeper.
